I’ve never been the best at baking, but when it comes to breakfast and making healthy versions of unhealthier options, I’m your girl. This is basically porridge in waffle form, with a few ingredients here and there to make soft and fluffy. For those who want to get some extra protein in your diet, without taking agross protein shake or having protein oats (which in my opinion, aren’t the nicest) then protein waffles are an awesome option! The texture isn’t grainy and the flavour isn’t as pronounced as it would be when used in oats or in a shake. If you don’t want to use protein however, just use another 1/4 cup of whatever flour you would like such as almond meal, coconut flour, more oats etc!
The flavour of these is also completely interchangeable. I went to Speedos Cafe in Bondi one day and ordered their Vegan Matcha Waffles and I couldn’t help myself but try to recreate them and I think I did a pretty good job. Mine doesn’t have the maple sryup, ice cream, meringues and everything else they added on top, but these are a guilt free option that you can have everyday (if you have the time) or for a special weekend treat, which is what I like to do. Instead of the Matcha and Spirulina (which I more so used to give it more of a green colour), you can use cocoa/cacao powder, blueberries (which I sometimes press into the mixture before I close the waffle iron), chocolate chips, goji berries, coconut, lemon zest… the list goes on! You can also use whatever protein powder you would like and whatever plant milk you would like.
Just be creative and I’m sure you’ll find something that you love. All you need to do is follow the basics of this recipe and you’ve got yourself a solid waffle recipe!
Now lets get onto the actual recipe before I get hungry again…
Protein Matcha Waffles
~ 1/2 cup rolled oats
~1 scoop (25g) of tropeaka vanilla lean protein powder
~1/2 cup almond milk
~1/2-1 tsp of matcha powder
~1/4 tsp spirulina powder
~1/2 tsp cinnamon
~1 tbsp chia seeds + 3 tbsp water
~1/4 tsp vanilla extract
~1/2 tsp baking powder
~1/4 tsp baking soda
~1/2 tsp lemon juice
~Firstly make your chia egg by placing the chia seeds with the 3 tablespoons of water in a small bowl. Let this sit for about 5 minutes.
~ Turn on your waffle iron (you can totally make these into pancakes) and let it heat up.
~ Blend up your oats in a blender to make a flour. Place the flour and the rest of the dry ingredients into a bowl and set aside.
~ Add the banana, almond milk, vanilla, chia egg and lemon juice into the blender and blend.
~ Add the wet mixture into the dry and stir it up.
~ Place the batter into your waffle iron and wait until the time is up!
~ Serve with your favourite toppings.
