There are people in the world who hate tofu and there are people who don’t. Since eating plant based, I’ve been eating it more than I ever have and I honestly love it. But, it has only recently become something that I crave and genuinely enjoy eating because I have found the perfect way to cook it (for me) and the perfect marinades (for me). When marinated and cooked properly, tofu can be completely transformed! I highly advise letting your tofu soak in the marinade overnight as the tofu does it’s spongey thing and soaks up a heap of flavour, which will in turn make for a more enjoyable experience.
I’ll be sharing three marinades with you being a Sweet and Spicy marinade, Nutty marinade (with a peanut free option!) and a BBQ marinade. With each dish I’ll be sharing a bowl, which goes perfectly with that style of tofu. I love each of these marinades and I have even had a chicken nugget/fish finger flash back while eating the Nutty Tofu, it was the weirdest and best thing ever!
For all of the recipes I’ve created I’ve used a 100-125 gram serving size of tofu as that is usually the recommended amount. These marinades will give you a little extra so don’t worry about being too exact with measurements! Just use the quantity of ingredients depending on how much tofu you are marinading. So double, triple, decrease the quantity etc. you get the gist!
The method is the same for all of the recipes so I’ll post that right now.
Tofu Marinade Method:
~Preheat oven to 200 degrees fan forced
~Chop your tofu into bite sized cubs
~Combine all off the marinade ingredients together and coat your tofu
~Leave to marinade overnight if you want the flavour to be fully absorbed or do it straight away.
~Bake in the oven on a non stick tray (or use some oil if you need) for 20-25 minutes until golden and crispy. If you don’t want your tofu super crispy, take out an the 15 minute mark.
~Serve with your favourite ingredients
Sweet and Spicy Tofu
Sweet and Spicy Tofu served with baked pumpkin, steamed peas, tamari sauteed kale, fresh tomatoes and hummus.
~1/2 tbsp sweet chilli sauce (I use the Global Organics brand)
~1/2 tbsp coconut aminos OR tamari
~Juice of half a lime
~Pinch of chilli flakes
~1/2 garlic clove, minced
~1/ tsp corn starch
~1/2-1 tbsp water
~Optional: Sesame seeds
Sweet and Spicy Tofu served ‘Gado Gado Salad’ style with corn, fresh cucumber and carrot, baked Hawaiian sweet potato, fresh tomatoes and coriander, over spinach.
Bonus Gado Gado Style Sauce Recipe (pictured above)
~1/2 tbsp tamari or soy sauce
~1/2 tbsp tahini OR peanut butter for a more traditional sauce
~1/2-1 tbsp water
~1/2 tbsp lime juice
BBQ Tofu served with quinoa, steamed peas and corn, turmeric roasted cauliflower, paprika roasted carrot chips and kimchi sauerkraut, over spinach.
~1/2 tomato paste
~1/4 tsp liquid smoke
~1/2 tbs soy sauce OR tamari
` 1/4 tsp paprika
~1-2 tbsp water
Nutty Tofu served with baked pumpkin, Italian chickpea and spinach stew, fresh tomatoes, sun-dried tomatoes and eggplant dip, over spinach.
~1/2 tbsp tahini OR peanut butter
~ squeeze of lime
~1/2 soy sauce OR tamari
~1/2 tsp chilli flakes
~1 tbsp water
