Fail Proof Fluffy Gluten Free Vegan Banana Bread

Hello everybody!


Has anyone ever tried to make a gluten free/refined sugar free/vegan banana bread and it literally turns out like a chewy, air pocketless, super wet, flat piece of “food”? Because I have never come across a recipe that has resulted in a super fluffy, moist and delicious banana bread! Even though these recipes that I’ve tried have had pictures of their super risen and fluffy banana bread making me feel like I have some sort of hope in what I’ll take out of the oven, they still haven’t work! And trust me, I follow recipes to the ‘T’.


I bring to you my Fail Proof Fluffy Gluten Free Vegan Banana Bread, which (I hope) solves all of your problems! The answer is buckwheat flour. A grain that I struggle to believe is gluten free, but I promise you it is. It acts exactly like a regular flour without making you feel sluggish or giving you any tummy pains that regular flour might. I added in some oat flour, but only a little because as soon as I bake with a lot of oat flour the product doesn’t rise at all, because I love the flavour that oats give any baked good. I also live off of oatmeal for breakfast.. so that might be why I put it in. Don’t judge.


Anyways, I created this recipe based off of a few different loaf recipes that I’ve tried in the past, keeping and omitting certain ingredients that didn’t fly with me. I can certainly say that it is the best gluten free vegan banana bread I have ever eaten that IS good for you. There is absolutely nothing bad about the ingredients that I have used so no one should feel guilty eating a slice of this with peanut butter and jam for breakfast. GO RIGHT AHEAD! EAT THE WHOLE LOAF! Maybe don’t, because then you’ll get a tummy ache that is the different kind of tummy ache that results from eating gluten…

Anyways, here’s the recipe. I hope you like it!


Fail Proof Fluffy Gluten Free Vegan Banana Bread

1 cup buckwheat flour
1/2 cup oat flour
1.5 tsp baking power
1 tsp baking soda
1/4 cup walnuts, chopped
1 tsp cinnamon

1/3 cup plant milk (I used almond)
3 large bananas, mashed
2 tbsp flaxseed meal + 6 tbsp water
1 tsp lemon juice
1/4 cup brown rice syrup
1 tbsp maple syrup
Optional: 2-3 dates chopped dates, chopped vegan chocolate or blueberries

~ Preheat your oven to 180 degrees celsius
~ Firstly combine the flaxseed meal with the water and let it sit while you prepare the batter
~ Combine all of the dry ingredients together and mix well
~ In another bowl mash the bananas and then add in the rest of the wet ingredients into the same bowl.
~ Lastly add the flaxseed + water mixture into the wet mixture and pour this into the dry ingredients. Stir well.
~ Add the batter into a greased or lined loaf pan and bake for 45 minutes.
